Blueberry cake


  • 3 eggs a glass of sugar
  • 3 tbsp. l. flour
  • 1 tbsp. l. starch
  • a glass of blueberries (you can ice cream)
  • 200 g soft cream cheese
  • a glass of 35% cream
  • 15 g sheet gelatin
  • vanilla pod


  1. Prepare two biscuit cakes. To do this, mix flour with starch. Separate the yolks and whites, beat them separately into a strong foam with half a glass of sugar, then mix in several steps, add flour. After kneading the dough, shape into two cakes and place them on two baking sheets. Sprinkle them with blueberries and bake for 12 minutes at 180 degrees Celsius.
  2. While the cake base is baking, prepare the blueberry mousse. To do this, chop blueberries in a blender and heat the resulting puree in the microwave. Add gelatin soaked in cold water, whipped cream and cheese base (mix cheese with some of the cream, half a glass of sugar and a vanilla pod). Place the mousse between the biscuits and refrigerate the cake for a few hours until it hardens. After that, decorate the finished cake with berries, as well as thin slices of chocolate, meringues or other light sweets.

For the test:

  • flour - 300 g
  • butter - 200 g
  • water - 1/4 cup
  • lemon juice - 2 tsp
  • salt - a pinch, to taste

For filling:

  • blueberries - 500 g
  • banana - 1 pc
  • 2 egg whites
  • crushed almonds - 50 g
  • sugar - 50 g
  • cinnamon - 1/2 tsp


  1. Mix flour with salt and sugar. Cut the butter into medium cubes and place in the freezer for 15 minutes. Place lemon juice there, after mixing it with a quarter of a glass of water. When the butter has cooled, chop it into small pea-sized pieces and combine with the flour. Then add ice water with lemon juice to the mixture and knead the dough. Wrap in plastic and refrigerate while you prepare the filling.
  2. Put the blueberries in a ladle (if using frozen, wait until they thaw over a colander), then add a little water or juice from the berries, 25 grams of sugar and bring the mixture to a boil. Dissolve the starch in a quarter glass of water with lemon juice and add it to the filling. Stir well, then bring the mixture to a boil again and simmer for 1-2 minutes over low heat to thicken the filling. After removing the ladle from the heat, add the remaining 25 g of sugar to the filling and transfer to a large bowl to cool.
  3. Roll out the chilled dough and place in a baking dish. Pour the cooled filling inside and place the pie in the oven preheated to 210 degrees Celsius. Bake the pie for 30-40 minutes, periodically checking its readiness.
